Today we’d like to inspire you with this touching story about a woman that adopted a raw food lifestyle to save her life.
 
Joan Jackson had a laundry list of problems going on in her body in 2005. She lacked energy, had acid reflux, hypertension, was pre-diabetic and weighed approximately 320 pounds. Pain in her colon was the last straw – from that moment she adopted an organic, vegan and mostly raw diet. Within three days, her symptoms disappeared and within one and a half years, she had lost the weight.
After attending a three-week program at the Optimum Health Institute in San Diego, she learned the effects or raw food and realized there was a lack of teaching people HOW to implement the lifestyle.
She transitioned from 60 per cent raw to 100 per cent raw and set her kitchen up to do so. Opening up her home to the Optimum Health Institute was the moment her life took a turn. Her career in law turned to a career in raw. Jaws would drop at the insight of her kitchen setup and people began begging her to help them setup the same lifestyle. She began operating a raw food kitchen from her home and demonstrated that it could be done in your domestic environment; not just a restaurant kitchen.
To adopt this lifestyle takes more than watching some raw food demonstrations. It involves learning how to overcome obstacles, learning how to organize and prepare quick, tasty, raw food recipes in advance and learning how to work and travel while being raw.
Since 2006 Jackson has been teaching people with cancer, diabetes and heart disease how to make the raw-food lifestyle work for them. She conducts live classes, coaching and consulting to promote a seamless transition to a raw food lifestyle.

Jackson was recently interviewed by the team at Sky Island Organics. Jackson said, “I believe that if we can make the raw food lifestyle compete in the areas of convenience and function then most people can make it sustainable. That's what I teach.”

According to Jackson, the answer to this is the gap between INTENTION and IMPLEMENTATION. To bridge the gap, you have to learn how to think about the creation of food and steer clear of dogma and perfectionism.
